G\u0131day\u0131 ne kadar etkin kulland\u0131\u011f\u0131m\u0131z konusunda olduk\u00e7a s\u0131k\u0131nt\u0131lar var. BM \u00c7evre Program\u0131 (UNEP) 2021 g\u0131da israf\u0131 indeksi raporuna g\u00f6re d\u00fcnyada 1.05 milyar ton, T\u00fcrkiye\u2019de ise ortalama yakla\u015f\u0131k 26 milyon ton g\u0131da israf ediliyor. 2024 verilerine bakt\u0131\u011f\u0131m\u0131zda bu rakam 3,5 kat artm\u0131\u015f olarak kar\u015f\u0131m\u0131za \u00e7\u0131k\u0131yor, dolay\u0131s\u0131yla g\u00fcn ge\u00e7tik\u00e7e g\u0131day\u0131 daha fazla israf eder hale geliyoruz. Bir taraftan da d\u00fcnyan\u0131n \u00f6nemli sorunlar\u0131ndan biri, a\u00e7l\u0131k sorunu var.\u00a0 FAO verilerine g\u00f6re israf edilen g\u0131dalar\u0131n sadece \u00fc\u00e7te birinin bile d\u00fcnyadaki a\u00e7l\u0131\u011f\u0131n sonland\u0131r\u0131lmas\u0131na yetecek miktarda oldu\u011fu belirtilmektedir. Bu israf edilen g\u0131dalar\u0131n \u00fc\u00e7te birini israftan kurtarsayd\u0131k, d\u00fcnyada a\u00e7l\u0131k sorunu ya\u015fanmayacakt\u0131. G\u0131dalar\u0131 israf etmenin bir\u00e7ok fakt\u00f6r\u00fc var. Bunlardan en \u00f6nemlisi g\u0131dalar\u0131n bozulmas\u0131d\u0131r. Do\u011fru muhafaza y\u00f6ntemi uygulan\u0131rsa g\u0131dalar\u0131 bozulmas\u0131n\u0131n \u00f6n\u00fcne ge\u00e7ilmi\u015f olacak. G\u0131da israf\u0131nda \u00f6nemli rol alan uygulamalar aras\u0131nda k\u00f6t\u00fc hasat ve paketleme uygulamalar\u0131, yiyeceklerin yanl\u0131\u015f saklanmas\u0131, yanl\u0131\u015f so\u011futma y\u00f6ntemleri, altyap\u0131 s\u0131n\u0131rlamalar\u0131, arz fazlas\u0131na yol a\u00e7an a\u015f\u0131r\u0131 \u00fcretim, tedarik\u00e7iler ve perakendeciler aras\u0131ndaki yetersiz ileti\u015fim, d\u0131\u015f g\u00f6r\u00fcn\u00fcm\u00fc m\u00fckemmel olan \u00fcr\u00fcnlere y\u00f6nelik t\u00fcketici talebi gibi etmenler yer almaktad\u0131r. A\u015f\u0131r\u0131 sat\u0131n al\u0131m, do\u011fru bir \u015fekilde depolamama, s\u00fcrekli taze g\u0131da t\u00fcketimi ve saklama yerinin olmamas\u0131 da bu nedenler aras\u0131ndad\u0131r. En fazla israf etti\u011fimiz g\u0131da ekmektir. T\u00fcrkiye\u2019de 4,9 milyon ekmek israf ediliyor. G\u0131dalarda bulunmamas\u0131 gereken cam, plastik, metal gibi yabanc\u0131 maddeler, fiziksel tehlike olarak kar\u015f\u0131m\u0131za \u00e7\u0131kmakta. Yabanc\u0131 maddelerin g\u0131dalarda \u00e7\u0131kmas\u0131, \u00f6rne\u011fin cam gibi k\u0131r\u0131lacak maddelerin g\u0131dan\u0131n \u00e7evresinde bulunmas\u0131 tehlikelidir. Kimyasal tehlikelerde ise g\u0131dalara eklenen veya \u00e7evreden, ambalaj malzemelerinden g\u0131daya ge\u00e7i\u015f yapan kimyasallard\u0131r. Biyolojik tehlikeler g\u0131da bile\u015fiminde do\u011fal olarak bulunan toksinler (\u00f6rne\u011fin; ye\u015fillenmi\u015f ve filizlenmi\u015f patateste olu\u015fan solanin, zehirli mantarlar, baz\u0131 bitki meyvelerindeki siyanatlar) olabildi\u011fi gibi, g\u0131dalara bula\u015fan ve uygun ko\u015fullarda \u00fcretilmeme veya saklanmama nedeniyle geli\u015fen mikroorganizmalar (k\u00fcfler, parazitler, bakteriler), vir\u00fcsler ve mikrobiyal toksinler de olabilmektedir. Sa\u011fl\u0131kl\u0131 olmak, bir insan\u0131n en temel hakk\u0131d\u0131r. G\u0131da \u00fcr\u00fcnleri sa\u011fl\u0131\u011f\u0131m\u0131z\u0131 en kolay etkileyecek etmenlerin ba\u015f\u0131nda gelmektedir. Dolay\u0131s\u0131yla, g\u0131da \u00fcr\u00fcn\u00fcn\u00fcn g\u00fcvenli olmas\u0131, t\u00fcketicinin mutlak bir talebidir ve \u00fcreticinin sorumlulu\u011fudur. G\u00fcvenilir olmayan bir g\u0131dan\u0131n t\u00fcketimi sonucunda g\u0131da kaynakl\u0131 mikrobiyal hastal\u0131klar meydana gelebilmekte ve bunlar\u0131n b\u00fcy\u00fck bir \u00e7o\u011funlu\u011funa patojen mikroorganizmalar neden olmakta, bu hastal\u0131klar y\u00fcksek orada morbidite veya mortalite ile sonu\u00e7lanmaktad\u0131r. G\u0131da kaynakl\u0131 hastal\u0131klarda rol oynayan g\u0131dalar aras\u0131nda tavuk vb. k\u00fcmes hayvanlar\u0131n\u0131n etleri, et ve et \u00fcr\u00fcnleri, hayvansal kaynakl\u0131 di\u011fer g\u0131dalar, yumurta ve yumurta i\u00e7eren g\u0131dalar, \u00e7i\u011f s\u00fct ve s\u00fct \u00fcr\u00fcnleri, kontamine su kaynaklar\u0131 veya kontamine sular ile temas etmi\u015f sebzeler, salatalar, \u00e7i\u011f sebze ve meyveler, \u00e7i\u011f veya t\u00fcts\u00fclenmi\u015f bal\u0131k, kabuklu deniz \u00fcr\u00fcnleri, ev yap\u0131m\u0131 konserveler, so\u011fuk sandvi\u00e7 ve haz\u0131rlan\u0131rken el ile temas eden ve haz\u0131rlama sonras\u0131nda \u0131s\u0131sal i\u015flem g\u00f6rmeyen g\u0131dalar yer almaktad\u0131r. \u00dclkemizde bir\u00e7ok koruyucu katk\u0131 maddesi ekleniyor. Kullan\u0131lan bu kimyasallar\u0131n miktar\u0131 \u00f6nemlidir. Bununla beraber kullan\u0131lan ambalajlardan da kimyasallar\u0131n ge\u00e7mesi m\u00fcmk\u00fcnd\u00fcr. Baz\u0131 g\u0131dalar\u00a0 do\u011fal olarak i\u00e7erisinde toksinleri bar\u0131nd\u0131r\u0131yor. \u00d6rne\u011fin filizlenmi\u015f bir patatesi t\u00fcketti\u011fimizde solyanin denilen bir toksini t\u00fcketmi\u015f oluyoruz. Bu toksik madde kanserojen etki yapabiliyor. Biyolojik tehlikelere bakt\u0131\u011f\u0131m\u0131zda kavun karpuz ele ald\u0131\u011f\u0131m\u0131zda bu \u00fcr\u00fcnleri do\u011fru bir \u015fekilde dezenfekte etmeden uygunsuz \u015fekilde kesilirse d\u0131\u015f\u0131ndaki biyolojik dengeler i\u00e7 yap\u0131ya ge\u00e7ip hastal\u0131\u011fa neden olabiliyor. 2015-2020 aras\u0131nda g\u0131da kaynakl\u0131 hastal\u0131klar nedeniyle hastanelere 18 milyon 314 bin 239 ba\u015fvuru oldu\u011funu yapt\u0131\u011f\u0131, ba\u015fvuranlar\u0131n aras\u0131ndan 5 y\u0131lda g\u0131da kaynakl\u0131 bin 714 ki\u015finin ise bu sebepten hayat\u0131n\u0131 kaybetti\u011fi bildirilmi\u015ftir\u201d diye konu\u015ftu.<\/p>\n<p style=\"text-align: justify;\"><b>\u201cG\u0131da g\u00fcvenli\u011finde be\u015f anahtar kural\u201d<\/b><\/p>\n<p style=\"text-align: justify;\">Prof. Dr. \u0130lkin \u015eeng\u00fcn, \u201cMikroorganizmalar\u0131n kontrol alt\u0131na al\u0131nmas\u0131nda d\u00f6rt temel ilke uygulanmaktad\u0131r. Kontaminasyonun \u00f6nlenmesi, mikroorganizmalar\u0131n uzakla\u015ft\u0131r\u0131lmas\u0131, mikrobiyal geli\u015fmenin inhibisyonu, mikroorganizmalar\u0131n \u00f6ld\u00fcr\u00fclmesi. G\u0131dalar\u0131 muhafaza ederken \u00f6ncelikle g\u0131day\u0131 korumam\u0131z gerekiyor; kontaminasyonu engelleyerek, uygun paketleme, do\u011fru bir \u015fekilde muhafaza etme, mikroorganizma bula\u015ft\u0131ysa ay\u0131klanarak bunun uzakla\u015ft\u0131r\u0131lmas\u0131, \u00e7o\u011falmas\u0131n\u0131n engellenmesi, mikroorganizman\u0131n \u00f6ld\u00fcr\u00fclmesi \u015feklinde olmal\u0131d\u0131r. Buzdolab\u0131nda en altta sebze meyve onun \u00fcst\u00fcnde \u00e7i\u011f et \u00fcr\u00fcnleri, bir \u00fczerinde pi\u015fmi\u015f et \u00fcr\u00fcnleri, peynir s\u00fct \u00fcr\u00fcnleri en \u00fcste pi\u015fmeden t\u00fcketilecek g\u0131da \u015feklinde dizayn edilir. B\u00f6ylelikle g\u0131dalar daha g\u00fcvenilir saklanm\u0131\u015f oluyor. G\u0131dalar\u0131 buzdolab\u0131nda tutu\u011fumuzda belli \u00f6l\u00e7\u00fcde mikroorganizmalar\u0131n \u00fcremesini engellemi\u015f oluyoruz. Pi\u015firme i\u015flemi uygulad\u0131\u011f\u0131m\u0131zda mikroorganizmalar\u0131n \u00f6ld\u00fcr\u00fclmesini sa\u011fl\u0131yoruz. Dondurma y\u00f6ntemiyle saklad\u0131\u011f\u0131m\u0131z g\u0131dalarda, g\u0131day\u0131 \u00e7\u00f6zd\u00fckten sonra tekrar dondurmamak \u00f6nemlidir.\u00a0 Donmu\u015f g\u0131dalar\u0131 en ideal \u015fekilde 4 derecede \u00e7\u00f6zd\u00fcrmek \u00f6nemlidir. G\u0131da kaynakl\u0131 hastal\u0131klar\u0131n \u00f6nlenmesi, sa\u011fl\u0131kl\u0131 bir topluma ula\u015fmas\u0131 i\u00e7in g\u00fcvenilir g\u0131da \u00e7ok \u00f6nemli. Bu kongrenin amac\u0131 farkl\u0131 konular\u0131n sa\u011fl\u0131\u011f\u0131 ne \u015fekilde etkiledi\u011fini irdelemektir. D\u00fcnya Sa\u011fl\u0131k \u00d6rg\u00fct\u00fc\u2019n\u00fcn g\u00fcvenli beslenmek i\u00e7in 5 anahtar kural\u0131; temizli\u011fe \u00f6nem verin,\u00a0 pi\u015fmi\u015f ve \u00e7i\u011f g\u0131dalar\u0131 ayr\u0131 tutun, iyice pi\u015firin, yiyeceklerinizi do\u011fru \u0131s\u0131da saklay\u0131n, temiz su, temiz malzeme kullan\u0131n. Sonu\u00e7 olarak t\u00fcketici sa\u011fl\u0131kl\u0131 beslenmeyi g\u00f6z \u00f6n\u00fcne alarak;\u00a0 yeterli ve dengeli beslenmeyi, g\u0131da kaynakl\u0131 yayg\u0131n hastal\u0131klar\u0131 ve \u00f6nleme y\u00f6ntemlerini, g\u00fcvenli g\u0131da sa\u011flama basamaklar\u0131n\u0131, g\u0131da etiketlerinde yaz\u0131lanlar\u0131 bilmelidir\u201d diye konu\u015ftu.<\/p>\n<p style=\"text-align: justify;\">Prof. Dr. \u0130lkin \u015eeng\u00fcn, \u201cSonu\u00e7 olarak, g\u0131da kaynakl\u0131 hastal\u0131klar insan sa\u011fl\u0131\u011f\u0131 \u00fczerinde \u00f6zellikle de ba\u011f\u0131\u015f\u0131kl\u0131k sistemi zay\u0131f olan \u00e7ocuk, ya\u015fl\u0131 ve hamile guruplar\u0131nda ciddi bir tehlike olu\u015fturmaktad\u0131r. G\u0131da kaynakl\u0131 hastal\u0131klar\u0131n bir\u00e7o\u011funun g\u0131da g\u00fcvenilirli\u011finin sa\u011flanamad\u0131\u011f\u0131, uygunsuz \u015fartlarda \u00fcretilen \u00fcr\u00fcnlerden kaynakland\u0131\u011f\u0131 bilinmektedir. T\u00fcketici \u00f6ncelikle sa\u011fl\u0131kl\u0131 beslenme bilincini g\u00f6z \u00f6n\u00fcnde bulundurarak \u2018g\u00fcvenilir g\u0131da\u2019 t\u00fcketmelidir.
