Ege \u00dcniversitesi G\u0131da M\u00fchendisli\u011fi B\u00f6l\u00fcm\u00fc \u00d6\u011fretim \u00dcyesi Prof. Dr. Fatma Meltem Serdaro\u011flu y\u00fcr\u00fct\u00fcc\u00fcl\u00fc\u011f\u00fcnde haz\u0131rlanan \u201cYe\u015fil Modifikasyon ile Tasarlanm\u0131\u015f Keten Tohumu ve Kabak \u00c7ekirde\u011fi Proteinlerinin Tekno-Fonksiyonel \u00d6zelliklerinin ve Et Sistemlerinde Kullan\u0131mlar\u0131n\u0131n Ara\u015ft\u0131r\u0131lmas\u0131\u201d ba\u015fl\u0131kl\u0131 Tar\u0131m, Ormanc\u0131l\u0131k ve Veterinerlik Ara\u015ft\u0131rma Destek Grubu (TOVAG) projesi, T\u00dcB\u0130TAK taraf\u0131ndan desteklenmeye uygun bulundu. Proje ekibi, modern teknolojik y\u00f6ntemlerle keten tohumu ve kabak \u00e7ekirde\u011fi proteinlerinin yap\u0131lar\u0131n\u0131 ve fonksiyonlar\u0131n\u0131 geli\u015ftirecek.<\/p>\n
Ege \u00dcniversitesi Rekt\u00f6r\u00fc Prof. Dr. Necdet Budak proje ekibini makam\u0131nda a\u011f\u0131rlayarak tebrik etti. Prof. Dr. Budak, \u201cT\u00dcB\u0130TAK nezdindeki ba\u015far\u0131lar\u0131m\u0131z akademisyenlerimizin verimli \u00e7al\u0131\u015fmalar\u0131 ve projeleri ile h\u0131z kesmeden devam ediyor. Proje hakk\u0131nda bilgi veren Prof. Dr. Fatma Meltem Serdaro\u011flu, \u201cProjenin amac\u0131, tekno-fonksiyonel \u00f6zellikleri zay\u0131f olan keten tohumu ve kabak \u00e7ekirde\u011fi proteinlerinin bu \u00f6zelliklerinin ye\u015fil modifikasyon y\u00f6ntemi ile geli\u015ftirilerek yeni g\u0131da bile\u015fenleri \u00fcretilmesi ve bu bile\u015fenlerin model sistem et em\u00fclsiyonlar\u0131nda hayvansal ya\u011f ikamesi olarak kullan\u0131lmas\u0131d\u0131r. Bu yenilik\u00e7i s\u00fcre\u00e7, g\u0131da end\u00fcstrisindeki \u00fcreticilere sa\u011fl\u0131k a\u00e7\u0131s\u0131ndan daha faydal\u0131 \u00fcr\u00fcnler sunma potansiyeli ta\u015f\u0131d\u0131\u011f\u0131ndan g\u0131da bile\u015fenleri tedari\u011finde d\u0131\u015fa ba\u011f\u0131ml\u0131l\u0131\u011f\u0131 azaltacak. Elde edilen bitkisel proteinlerin y\u00fcksek oranda doymu\u015f ya\u011f ve kolesterol i\u00e7eren et \u00fcr\u00fcnlerinde hayvansal ya\u011f yerine kullan\u0131lmas\u0131yla, t\u00fcketici talebine uygun hale getirilmesi sa\u011flanacak. Et sistemlerinde kullan\u0131lmas\u0131n\u0131n yan\u0131 s\u0131ra em\u00fclgat\u00f6r \u00f6zelli\u011fi ta\u015f\u0131mas\u0131 nedeniyle vegan t\u00fcketicilerin hayvansal \u00fcr\u00fcnlere alternatif olarak t\u00fcketebilece\u011fi \u00fcr\u00fcnlerde kullan\u0131labilir bir g\u0131da bile\u015feni de \u00fcretilmi\u015f olacak.
